It is a plant with a much appreciated aroma that is reminiscent of ginger and real cardamom, being versatile and combining very well with both hot and cold recipes, as well as drinks. Its leaves, flowers, seeds and fruit skin can be used in different ways.<\/p>\n<p><img fetchpriority=\"high\" decoding=\"async\" src=\"https:\/\/jorgeforager.com.br\/wp-content\/uploads\/2022\/03\/IMG_9291-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" \/><\/p>\n<p>Pacov\u00e1 has been part of the Ferreira family's history since they moved to Paraty. It was presented to Z\u00e9 Ferreira as an antidote for snake bites, as well as a natural dewormer, and for many years only its medicinal side was observed. When Jorge Ferreira got involved with gastronomy he realized its gastronomic potential and, through knowledge and encouragement, great chefs began to introduce this spice into their recipes.<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/jorgeforager.com.br\/wp-content\/uploads\/2022\/03\/IMG_9225-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" \/><\/p>\n<p>Today, pacov\u00e1 has become a product that drives family farming and benefits the region. In partnership with Horto Municipal, a development program was set up in the territory of Paraty, where family farmers receive seedlings from the <i>Renealmia alpinia <\/i>which are planted in the agroforestry system, intercropped with banana trees, ju\u00e7ara palm, among other species for commercial purposes.<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/jorgeforager.com.br\/wp-content\/uploads\/2023\/11\/IMG_6873-300x200.jpg\" alt=\"\" width=\"300\" height=\"200\" \/><\/p>\n<p>In addition to these projects, other actions were developed through partnerships, such as with Angeli Temperos Paraty (<span style=\"text-decoration: underline;\"><a href=\"https:\/\/www.instagram.com\/angelitemperosparaty\/\" target=\"_blank\" rel=\"noopener\">@angelitemperosparaty<\/a><\/span>) which produces a mix of seasonings using pacov\u00e1 in the composition; coffee shops where pacov\u00e1 was added into blends, in addition to recipes made with the chefs, Bel Coelho (<span style=\"text-decoration: underline;\"><a href=\"https:\/\/www.instagram.com\/belcoelho\/\" target=\"_blank\" rel=\"noopener\">@belcoelho<\/a><\/span>) and Ana Bueno (<span style=\"text-decoration: underline;\"><a href=\"https:\/\/www.instagram.com\/anabueno_paraty\/\" target=\"_blank\" rel=\"noopener\">@anabueno_paraty<\/a><\/span>), within gastronomy.
